Gewürzhaus is beautiful lolly-shop style spice and herbs store located in the Strand Arcade, Sydney. Think gorgeous aromas, every spice, herb and tea in it’s neat place, and charming kitchenware (lots of copper goodness!). Check out their website for lots of tummy rumbling cooking recipes too!

Ingredients

3 ½ cups almond meal
¾ cup Demerara sugar
¾ cup Gewürzhaus Cardamom Pistachio Sugar, plus extra to serve
120 g. butter, at room temperature
2 free range eggs
250 g. natural yoghurt, plus extra to serve
½ tsp. Gewürzhaus Ground Nutmeg
1 tsp. Gewürzhaus Ground Cardamom
Zest of 1 orange
50 g. raw pistachios, chopped
Gewürzhaus Pyramid Flake Salt

Instructions

  1. Pre-heat oven to 180°C. Grease and line a 26cm cake pan.
  2. In a food processor, pulse together the almond meal, sugars, butter and a pinch of salt until it resembles coarse breadcrumbs.
  3. Spoon half the mixture into your prepared pan and press down to form an even base.
  4. Add the eggs, yoghurt, half the orange zest and spices to the remaining crumb and pulse until smooth and creamy. Pour over the base, and tap the tin to level the top of the cake. Scatter the top with pistachios and bake for 30-35 minutes or until cake is golden.
  5. Cool in pan on a wire rack. Mix together yoghurt, remaining orange zest and 1 tsp. of Cardamom Pistachio Sugar to serve.

This cake will keep in an airtight container for up to a week.

MATERIALS

1. Sturdy twine or ribbon.

2. Scissors.

3. Your choice of scrap fabric cut into strips.

4. Ribbon of your choice.

DIRECTIONS

Step 1: Follow the pattern below or create your own pattern using a variety of widths and textures of ribbon and fabric. Repeat the pattern until your desired length for your garland is reached. We created a short garland fit for a fireplace. You can use these same steps with long strips to create a ribbon backdrop for a wedding ceremony.

Step 2: Loosely tie the fabric and ribbon to the thick twine. Leave a few inches of length at the top. By tying the fabric loosely, you will be able to adjust the strips as needed.

INGREDIENTS & SUPPLIES

1/2 batch of this gingerbread (or other 1 layer 8-inch cake), cooled

8-10 16 oz jars

1 1/2 c frosting (vanilla for snow, chocolate for mud, lemon for… yellow snow?)

ground pretzels for gravel or shredded coconut for snow

tweezers

marzipan kneaded with green food coloring for succulents or christmas trees

rosemary or other herbs

cookie cutouts, mini candy canes, sprinkles, any other fun decor

DIRECTIONS

Crumble up the cake into the bottom of the jars to form an even layer and pat it down gently. top with a blob of frosting (it’s easiest to use a piping bag for this). top with a thin layer of coconut or ground pretzels, and then use tweezers to position your plants and other decorations.

To make the marzipan succulents, roll out the marzipan and use small cookie cutters or a knife to cut out little ovals or hearts and then smoosh them together to form a little flower.
